A vibrant and flavorful pasta salad perfect for picnics and gatherings, featuring fresh veggies and creamy feta.

Ingredients

  • 3 cups cooked pasta (any shape)
  • 1 cup cherry tomatoes, halved
  • 1/2 cup cucumber, diced
  • 1/2 cup bell pepper, diced
  • 1/4 cup red onion, finely chopped
  • 1/2 cup black olives, sliced
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Combine the cooked pasta, cherry tomatoes, cucumber, bell pepper, red onion, black olives, and feta cheese in a large bowl. Give everything a gentle stir.
  2. Whisk together olive oil, red wine vinegar, oregano, salt, and pepper in a small bowl until well blended.
  3. Pour the dressing over the pasta salad and toss to combine, ensuring even coating.
  4. Chill in the refrigerator for at least 30 minutes before serving.

Notes

Leftover pasta salad can be stored in an airtight container in the refrigerator for up to 3 days. Revive with extra olive oil and vinegar if needed.
