A vibrant, hearty one-pot meal packed with all the classic flavors of a taco, ideal for busy weeknights.

Ingredients

  • 1 cup rice
  • 1 can black beans, drained and rinsed
  • 1 cup corn (fresh, frozen, or canned)
  • 1 bell pepper, diced
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 2 teaspoons taco seasoning
  • 2 cups vegetable broth
  • Salt and pepper to taste
  • Toppings: avocado, salsa, lime juice, cilantro, etc.

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add onion and garlic, sautéing until fragrant.
  3. Stir in the bell pepper and cook for 2-3 minutes until it softens.
  4. Add rice, black beans, corn, taco seasoning, and vegetable broth to the pot.
  5. Bring the mixture to a boil, then cover and reduce heat to low.
  6. Cook for 15-20 minutes, or until the rice is tender and the liquid is absorbed.
  7. Fluff with a fork, season with salt and pepper, and serve with desired toppings.

Notes
