A delightful yellow cake infused with pineapple and crowned with a fluffy whipped cream topping, perfect for any spring gathering.

  • 3 large eggs
  • 1/2 cup vegetable oil
  • 1 cup water
  • 1 can crushed pineapple, drained (20 oz)
  • 1 cup shredded coconut (for garnish)
  • 1 cup whipped cream
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Gather your ingredients.
  2. Preheat the oven to 350°F (175°C).
  3. Mix the yellow cake mix, eggs, vegetable oil, and water in a large mixing bowl.
  4. Fold in the drained crushed pineapple.
  5. Bake the cake in a greased 9×13 inch baking pan for about 30 minutes.
  6. Let the cake cool for 10 minutes in the pan, then transfer to a wire rack to cool completely.
  7. Whip the whipped cream, powdered sugar, and vanilla extract until soft peaks form.
