A warm and comforting chicken tortilla soup loaded with flavor and topped with crispy tortilla strips.

Ingredients

  • 2 boneless, skinless chicken breasts
  • 4 cups chicken broth
  • 1 can diced tomatoes
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 1 cup tortilla strips
  • Optional toppings: avocado, cheese, cilantro, lime

Instructions

  1. Sauté onions and garlic until fragrant.
  2. Add chicken breasts to the pot and cook until browned.
  3. Pour in chicken broth and diced tomatoes.
  4. Season with cumin, chili powder, salt, and pepper.
  5. Bring the mixture to a boil, then reduce heat and let it simmer for 20 minutes.
  6. Remove the chicken, shred it, and return it to the pot.
  7. Serve hot, topped with tortilla strips and optional toppings.

Notes

Can use rotisserie chicken to save time. Add jalapeños for heat; modify toppings based on preference.
