  • 1 cup almond milk (or any milk of choice)
  • 1 cup blueberries (fresh or frozen)
  • 1/4 cup honey or maple syrup
  • 1/2 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 2 large eggs
  • 1/4 cup Greek yogurt (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a baking dish.
  2. Combine the rolled oats, baking powder, cinnamon, and salt in a large bowl.
  3. Whisk together the eggs, almond milk, honey (or maple syrup), vanilla extract, and Greek yogurt (if using) in a separate bowl.
  4. Pour the wet ingredients into the dry ingredients and stir until combined.
  5. Fold in the blueberries gently.
  6. Pour the mixture into the prepared baking dish and spread it out evenly. Bake for 30-35 minutes, or until the top is golden.
