Delightful cherry pie bites with a flaky crust and sweet-tart cherry filling, perfect for gatherings and easy to make.

Ingredients

  • 1 package of refrigerated pie crusts
  • 2 cups of fresh or canned cherries (pitted)
  • 1/2 cup of sugar
  • 1 tablespoon of cornstarch
  • 1 teaspoon of vanilla extract
  • 1 egg (for egg wash)
  • Powdered sugar (for dusting)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Combine the pitted cherries, sugar, cornstarch, and vanilla extract in a mixing bowl.
  3. Roll out the refrigerated pie crusts on a lightly floured surface and cut into 3-inch circles.
  4. Place a heaping spoonful of the cherry mixture in the center of each circle.
  5. Fold the dough over the cherry filling and seal the edges using a fork.
  6. Brush the tops with egg wash for a golden sheen.
  7. Bake for 15-20 minutes or until golden brown.
  8. Cool slightly and dust with powdered sugar before serving.
