  • 1 cup almond flour
  • 1 3/4 cups powdered sugar
  • 3 egg whites
  • 1/4 cup granulated sugar
  • 1/2 teaspoon vanilla extract
  • 1/4 cup cream cheese, softened
  • 1/4 cup strawberry puree
  • 1/2 teaspoon lemon juice
  • Pink food coloring (optional)
  • Fresh strawberries for garnish

Instructions

  1. Preheat your oven to 300°F (150°C). Line a baking sheet with parchment paper.
  2. Sift together the almond flour and powdered sugar in a bowl.
  3. Beat the egg whites in a separate bowl until soft peaks form, then gradually add the granulated sugar until stiff peaks form.
  4. Fold the sifted dry ingredients and vanilla extract into the egg whites gently. Add pink food coloring if desired.
  5. Pipe small rounds onto the prepared baking sheet, each about the size of a quarter. Allow them to sit for 30 minutes.
  6. Bake in the preheated oven for 15-18 minutes. They should not jiggle when touched. Allow cooling.
  7. Combine cream cheese, strawberry puree, and lemon juice in a mixing bowl until smooth.
  8. Pipe the filling between two macaron shells.
  9. Chill in the fridge for about 30 minutes. Garnish with fresh strawberries before serving.

Notes

Store any leftovers in an airtight container in the fridge for up to 3 days or freeze for up to a month. Ensure leftovers are in a single layer to preserve their shape.
