Indulge in this rich and creamy chocolate cheesecake, featuring a chocolate cookie crust and velvety filling that’s perfect for any occasion.

  • 1 1/2 cups (150 g) chocolate cookie crumbs
  • 1/4 cup (60 g) melted butter
  • 900 g cream cheese
  • 1 cup (200 g) sugar
  • 1 teaspoon vanilla extract
  • 3 eggs
  • 200 g dark chocolate, melted
  • 1/2 cup (120 ml) heavy cream

Instructions

  1. Preheat your oven to 160°C (320°F).
  2. Mix the chocolate cookie crumbs with the melted butter and press into the bottom of a springform pan.
  3. Bake the crust for 10 minutes, then allow it to cool.
  4. Beat the cream cheese until smooth and creamy.
  5. Mix in the sugar and vanilla extract until silky smooth.
  6. Add the eggs one at a time, mixing well after each.
  7. Stir in the melted dark chocolate and heavy cream.
  8. Pour the filling over the cooled crust.
  9. Bake for 55-65 minutes until set but with a slight jiggle.
  10. Cool the cheesecake completely at room temperature.
  11. Refrigerate for at least 4 hours before serving.

Notes

For the smoothest filling, ensure cream cheese is room temperature. If you worry about cracking, bake in a water bath.
