A delightful layered cake combining rich chocolate and gooey caramel, perfect for celebrations and special occasions.

Ingredients

  • 1 ¾ cups all-purpose flour
  • 3/4 cup unsweetened cocoa powder
  • 2 tsp baking soda
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 cup buttermilk (or milk + 1 tbsp vinegar)
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 3/4 cups sugar
  • 2 tsp vanilla extract
  • 1 cup hot coffee or boiling water
  • 1 cup caramel sauce
  • Optional: 1/4 tsp sea salt
  • Optional: 1/2 cup sweetened condensed milk
  • Optional: 1/4 cup cream cheese or peanut butter
  • 1 cup semi-sweet chocolate chips
  • 1/2 cup heavy cream
  • Crushed pecans or toffee bits

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare two 9-inch round cake pans.
  2. Sift together the flour, cocoa powder, baking soda, baking powder, and salt in a bowl.
  3. Whisk together the buttermilk, vegetable oil, eggs, sugar, and vanilla extract in a separate bowl until smooth.
  4. Combine the wet and dry ingredients, mixing until just combined.
  5. Stir in the hot coffee or boiling water until well blended.
  6. Bake for 30-35 minutes, or until a toothpick inserted comes out clean.
  7. Cool the cakes in the pans for 10 minutes, then transfer to wire racks to cool completely.
  8. Create a layer of caramel sauce on top of the first cooled cake layer.
  9. Mix the sweetened condensed milk with cream cheese or peanut butter if using, and spread on top of the caramel layer.
  10. Assemble the second cake layer on top and prepare the ganache by heating the heavy cream and pouring it over the chocolate chips until smooth.
  11. Finish by drizzling the ganache over the cake and top with crushed pecans or toffee bits.

Notes

This cake is best served with a dollop of whipped cream or a scoop of vanilla ice cream.
