  • 2 cups grated carrots
  • 1 cup vegetable oil
  • 1 cup sugar
  • 4 large eggs
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup cocoa powder
  • 1 cup heavy cream
  • 1/2 cup cream cheese
  • 1/2 cup powdered sugar
  • 1/2 cup grated carrot for garnish

Instructions

  1. Preheat the oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. Blend the grated carrots, vegetable oil, sugar, and eggs until smooth.
  3. Whisk together flour, baking powder, salt, and cocoa powder in a large bowl.
  4. Combine the carrot mixture into the dry ingredients and stir until just mixed.
  5. Divide the batter evenly between the prepared cake pans.
  6. Bake for 30-35 minutes or until a toothpick comes out clean.
  7. Cool the cakes in the pans for 10 minutes, then on wire racks to cool completely.
  8. Whip together heavy cream, cream cheese, and powdered sugar until fluffy for the frosting.
  9. Assemble the cake by spreading frosting between the layers and on top.
  10. Add grated carrot on top for garnish before serving.

Notes

Try adding vanilla extract or a pinch of cinnamon for extra flavor.
