  • 1 red bell pepper
  • 1 yellow bell pepper
  • 1/4 red onion
  • 1/4 cup olive oil
  • 2 tablespoons white wine vinegar
  • 1 tablespoon honey

Instructions

  1. Rinse the veggies: Wash the cucumber, red bell pepper, yellow bell pepper, and red onion under cold running water.
  2. Prepare the cucumber: Peel the cucumber if desired, then cut it in half lengthwise and scoop out the seeds using a spoon.
  3. Slice the cucumber: Slice the cucumber into thin rounds and place them in a large mixing bowl.
  4. Chop the peppers: Remove the stems and seeds from the red and yellow bell peppers, then slice them into strips and add them to the bowl with the cucumber.
  5. Dice the onion: Finely dice the red onion and add it to the bowl with the other vegetables.
  6. Whisk the dressing: In a small bowl, whisk together the olive oil, white wine vinegar, honey, salt, and pepper until well combined.
  7. Dress the salad: Pour the dressing over the vegetables in the mixing bowl.
