Refreshing Cucumber and Dill Pinwheels are a perfect summer snack, combining cream cheese, fresh dill, and crunchy cucumber rolled in tortillas.

  • 1 oz dry ranch seasoning packet
  • 4 large flour tortillas
  • 2 tsp fresh chopped dill
  • 1 medium cucumber, sliced thin

Instructions

  1. Prepare the Dill and Cucumber: Chop your fresh dill and thinly slice the cucumber for a satisfying crunch.
  2. Mix the Cream Cheese and Seasoning: Combine the softened cream cheese with the dry ranch seasoning in a bowl until smooth.
  3. Spread the Cream Cheese Mixture: Lay out the tortillas and spread about a quarter of the cream cheese mixture evenly onto each.
  4. Add the Fresh Dill: Sprinkle chopped dill over the cream cheese mixture on each tortilla.
  5. Arrange the Cucumber: Place cucumber slices evenly over the cream cheese and dill for added crunch.
  6. Roll the Tortillas: Roll each tortilla tightly into a log, pressing gently as you go.
  7. Wrap and Chill: Wrap each log in plastic wrap and refrigerate for at least 1 hour.
  8. Slice and Serve: Cut off the uneven ends, then slice the log into 6 equal portions. Serve on a platter.
