Hearty Cowboy Beans slow-cooked with kielbasa and crispy bacon for a flavorful dish that brings family and friends together.

Ingredients

Scale
  • 1 lb kielbasa, sliced
  • 1 cup bacon, diced
  • 2 cans kidney beans, drained and rinsed
  • 2 cans pinto beans, drained and rinsed
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 cup barbecue sauce
  • 1/2 cup brown sugar
  • 1 tbsp Worcestershire sauce
  • 1 tsp mustard
  • Salt and pepper to taste

Instructions

  1. Crispy Bacon Bliss: In a skillet, cook the diced bacon until it reaches a glorious crispness, about 5-7 minutes. Remove and let drain on paper towels, keeping the bacon fat in the skillet.
  2. Sizzling Kielbasa: Add the sliced kielbasa to the skillet and cook until browned, about 5 minutes.
  3. The Flavor Foundation: In a crockpot, combine the cooked bacon and kielbasa with kidney beans, pinto beans, chopped onion, and minced garlic.
  4. Pour in the barbecue sauce, brown sugar, Worcestershire sauce, mustard, and season with salt and pepper. Stir well.
  5. Cook: on low for 6-8 hours or on high for 3-4 hours, stirring occasionally.
  6. Serve & Enjoy: Once ready, serve warm and enjoy those cozy flavors.

Notes

Can be served over rice, with cornbread, or as a topping for baked potatoes. Leftovers taste even better the next day.
