Delicious crispy garlic parmesan smashed potatoes with a fluffy interior, perfect as a side dish for any meal.

Ingredients

  • 1.5 lbs baby potatoes (Yukon gold or red)
  • 2–3 tbsp olive oil
  • 2 tbsp unsalted butter, melted (optional)
  • 3 cloves garlic, minced
  • 1/3 cup freshly grated parmesan cheese
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp dried herbs (rosemary, thyme, parsley, or Italian blend)
  • Optional garnish: chopped fresh parsley, extra parmesan

Instructions

  1. Preheat your oven to 450°F (230°C).
  2. Boil the baby potatoes in salted water until fork-tender, about 15-20 minutes.
  3. Drain the potatoes and let them cool slightly.
  4. Toss the potatoes with olive oil, melted butter (if using), garlic, salt, pepper, and dried herbs.
  5. Smash each potato with a potato masher or fork to create a jagged surface.
  6. Bake in the preheated oven for 20-25 minutes until crispy and golden brown.
  7. Remove from the oven and sprinkle with parmesan cheese, letting it melt.
  8. Garnish with fresh parsley if desired, and serve warm.

Notes

For extra crispy potatoes, boil them a little less until fork-tender and then smash them. You can experiment with fresh herbs and different cheeses for varied flavors.
