Deliciously crispy sweet potato fries topped with BBQ pulled pork, feta cheese, and creamy avocado.

Ingredients

  • 2 large sweet potatoes
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • BBQ pulled pork for topping
  • Feta cheese, crumbled
  • Olives
  • Black beans
  • Avocado, sliced
  • Cashew cream

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Cut the sweet potatoes into fry shapes and soak in water for 30 minutes.
  3. Drain and pat them dry with a kitchen towel.
  4. Toss the dried sweet potatoes with olive oil, salt, and pepper.
  5. Spread them out in a single layer on a baking sheet lined with parchment paper.
  6. Bake for 25-30 minutes, flipping halfway through.
  7. Top with BBQ pulled pork, feta, olives, black beans, avocado, and cashew cream. Serve warm.

Notes

For extra crispiness, finish under the broiler for a couple of minutes, watching closely to avoid burning.
