A comforting, creamy soup made with white beans and fresh spinach, perfect for chilly evenings.

Ingredients

  • 2 cans (15 oz each) white beans, drained and rinsed
  • 4 cups fresh spinach, chopped
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup coconut milk
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp dried thyme

Instructions

  1. Heat the olive oil in a large pot over medium heat until shimmering.
  2. Add diced onion and cook until it softens, about 5 minutes.
  3. Stir in minced garlic and cook for another minute, just until fragrant.
  4. Add the drained white beans, vegetable broth, coconut milk, salt, pepper, and thyme.
  5. Reduce the heat and let it simmer for 15 minutes.
  6. Use an immersion blender to blend the soup until it’s smooth and creamy.
  7. Stir in the chopped spinach and cook for another 5 minutes until wilted.
  8. Serve hot.

Notes

Pair with crusty whole grain bread or a fresh garden salad. Add a squeeze of lemon for brightness.
