  • 2 cups dried white beans, soaked overnight
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 garlic cloves, minced
  • 4 cups vegetable broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 bay leaf
  • Salt and pepper to taste
  • 1/2 cup heavy cream (or coconut milk for a dairy-free option)
  • 2 strips turkey bacon, cooked and crumbled (optional)

Instructions

  1. Drain and rinse the soaked white beans.
  2. Sauté the diced onion, carrots, and celery in olive oil for 5 minutes.
  3. Add minced garlic and cook for another minute.
  4. Combine soaked beans, vegetable broth, dried thyme, rosemary, and bay leaf; bring to a boil, then simmer for about an hour.
  5. Blend the soup until smooth, removing the bay leaf first.
  6. Stir in heavy cream (or coconut milk) and season with salt and pepper before serving.
