A nostalgic and comforting creamy pasta dish loaded with rich cheese and tender chicken, perfect for family dinners.

Ingredients

  • 1.5 lbs boneless skinless chicken breasts (cut into chunks)
  • 12 oz rotini pasta
  • 2 tbsp olive oil
  • 4 tbsp unsalted butter
  • 4 cloves garlic (minced)
  • 1.5 tsp Cajun seasoning
  • 0.5 tsp smoked paprika
  • Salt to taste
  • Black pepper to taste
  • 1.5 cups heavy cream
  • 0.75 cups chicken broth
  • 8 oz Velveeta cheese (cubed)
  • 0.75 cups shredded mozzarella cheese
  • 0.5 cups grated Parmesan cheese
  • 0.25 tsp red pepper flakes (optional)
  • 1 tsp Italian seasoning
  • Fresh parsley for garnish

Instructions

  1. Boil a large pot of salted water and cook the rotini until al dente. Remember to save about 1/2 cup of that precious pasta water before draining!
  2. Toss chicken chunks with Cajun seasoning, smoked paprika, salt, and pepper. Heat olive oil and 2 tablespoons of butter in a skillet over medium heat, then add the seasoned chicken. Brown the chicken for about 6-8 minutes until it’s golden and cooked through.
  3. Add half of the minced garlic and 4 ounces of Velveeta cheese to the chicken skillet. Stir until the Velveeta melts beautifully into the chicken. Set the chicken aside for now.
  4. Melt the remaining butter in the same skillet over medium heat. Add the leftover minced garlic and sauté until fragrant. Whisk in the heavy cream and chicken broth, then add the rest of the Velveeta cheese.
  5. Stir in the shredded mozzarella, grated Parmesan, Italian seasoning, and red pepper flakes (if using). Let it simmer until the sauce thickens and becomes irresistibly creamy.
  6. Toss the drained rotini into the creamy sauce, and mix well to ensure every piece of pasta is coated. If it looks a bit thick, gradually stir in some of that reserved pasta water until you reach your desired consistency.
  7. Garnish with fresh parsley for a pop of color and freshness.

Notes

For extra flavor, consider marinating the chicken in Cajun seasoning for a few hours before cooking. If looking for a lighter version, substitute the heavy cream with half-and-half or a fat-free alternative.
