A comforting and sophisticated dish featuring tender chicken, creamy sauce, sun-dried tomatoes, and cheese tortellini.

  • 1 lb boneless skinless chicken breast
  • 8 oz cheese tortellini
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 4 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes, chopped
  • 2 cups baby spinach
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 1 tsp Italian seasoning
  • 1/4 tsp red pepper flakes
  • Salt to taste
  • Black pepper to taste
  • 2 tbsp fresh parsley, chopped

Instructions

  1. Season the chicken breast generously with salt, black pepper, and Italian seasoning on both sides.
  2. Heat the olive oil and butter in a large skillet over medium heat until melted and hot.
  3. Cook the seasoned chicken for 5 to 7 minutes on each side until golden brown and cooked through, then slice into strips.
  4. Sauté the minced garlic in the same skillet for about 1 minute until fragrant.
  5. Add the chopped sun-dried tomatoes and cook for another 2 minutes.
  6. Deglaze the pan by pouring in the chicken broth, scraping up any browned bits.
  7. Add the heavy cream and bring to a gentle simmer.
  8. Incorporate the grated Parmesan cheese until melted and the sauce thickens.
  9. Fold in the baby spinach and red pepper flakes, cooking until the spinach wilts.
  10. Return the sliced chicken and add the cheese tortellini, simmering for 3 to 5 minutes until heated through.
  11. Garnish with chopped parsley and serve immediately.
