A warm and comforting Creamy Tuscan Chicken dish with succulent chicken breasts enveloped in a velvety sauce made from heavy cream, sun-dried tomatoes, and fresh spinach.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 cup sun-dried tomatoes, chopped
  • 1 cup spinach
  • 1 cup grated Parmesan cheese
  • Salt and pepper to taste
  • 1 teaspoon Italian seasoning

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Season the chicken breasts with salt, pepper, and Italian seasoning.
  3. Add the seasoned chicken breasts to the skillet and cook for about 6-7 minutes on each side until golden-brown and cooked through.
  4. Remove the chicken from the skillet and set aside.
  5. Sauté the minced garlic in the same skillet for just a minute until fragrant.
  6. Pour in the chicken broth and heavy cream, stirring gently to combine.
  7. Add the chopped sun-dried tomatoes and fresh spinach, cooking until the spinach wilts.
  8. Stir in the grated Parmesan cheese, allowing it to melt and thicken the sauce.
  9. Return the chicken to the skillet, coating each piece with the sauce, and simmer for a couple of minutes.
  10. Serve warm, garnished with additional Parmesan if desired.

Notes

Pairs wonderfully with pasta or rice to soak up the sauce. Leftovers can be stored in an airtight container for up to 3 days.
