  • 2 boneless, skinless chicken breasts
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 cups fresh spinach
  • 1/2 cup grated parmesan cheese
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp dried thyme

Instructions

  1. Heat olive oil in a pot over medium heat.
  2. Add diced onion and minced garlic, and sauté until soft and fragrant.
  3. Add the chicken breasts to the pot and cook until no longer pink, about 5-7 minutes.
  4. Pour in the chicken broth and bring everything to a gentle simmer.
  5. Stir in the heavy cream, fresh spinach, grated parmesan, salt, pepper, and thyme.
  6. Let the soup simmer for 15 minutes, stirring occasionally.
  7. Once the chicken is cooked through, shred it with two forks and return it to the pot.
