Ingredients

  • 1 lb sausage (Italian or breakfast)
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 4 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup potatoes, diced
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Brown the sausage in a large pot over medium heat until browned. Remove and set aside.
  2. Sauté the onion, carrots, and celery in the same pot until softened.
  3. Add garlic and cook for 1 more minute, stirring to combine the flavors.
  4. Pour in the chicken broth and bring to a boil, letting the aromas fill your kitchen.
  5. Add diced potatoes and Italian seasoning; simmer until potatoes are tender, about 10-15 minutes.
  6. Stir in the cooked sausage and heavy cream; heat through until just warmed.
  7. Season with salt and pepper to taste, adjusting for personal preference.
  8. Serve hot, garnished with fresh parsley for that perfect finishing touch.
