A comforting one-pot meal combining chicken sausage, fresh broccoli, and fluffy orzo in a creamy sauce.

Ingredients

  • 1 tablespoon olive oil
  • 12 ounces chicken sausage, sliced
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup orzo
  • 2 cups chicken broth
  • 1 cup milk
  • 2 cups broccoli florets
  • 1/2 cup grated Parmesan cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the sliced chicken sausage and cook until browned, about 5 minutes.
  3. Stir in the diced onion and minced garlic. Cook until fragrant and softened, about 2 minutes.
  4. Mix in the orzo, then pour in the chicken broth and milk. Bring to a gentle simmer.
  5. Cover the pot and cook for 8 to 10 minutes, stirring occasionally.
  6. Uncover and add the broccoli florets and grated Parmesan cheese. Stir until the cheese melts and the broccoli is tender, about 3 to 4 minutes.
  7. Season with salt and black pepper to taste, then stir to combine. Serve immediately.

Notes

Stir often during cooking to ensure orzo doesn’t stick. Customize vegetables or proteins as desired.
