  • 1/4 cup water
  • 1/2 cup heavy cream
  • 1/4 teaspoon sea salt
  • 4 ounces semisweet chocolate, chopped
  • 2 large eggs, separated
  • 1 teaspoon vanilla extract
  • 1 cup heavy cream (for whipping)

Instructions

  1. Create the caramel: In a saucepan, combine the sugar and water over medium heat. Stir gently until the sugar dissolves, then bring it to a boil. Let it cook without stirring until the mixture turns a lovely golden brown.
  2. Combine cream and salt: Once the caramel is ready, carefully remove it from the heat. Slowly add in the 1/2 cup heavy cream and sprinkle in the sea salt, stirring carefully until the mixture is smooth.
  3. Melt the chocolate: Add the chopped semisweet chocolate to the caramel mixture, stirring until the chocolate is completely melted and beautifully integrated.
  4. Whisk the yolks: In a separate bowl, whisk together the egg yolks and vanilla extract. Gradually mix this into the chocolate-caramel mixture, stirring well to combine.
  5. Beat the egg whites: In yet another bowl, beat the egg whites until stiff peaks form. Gently fold the beaten egg whites into the chocolate mixture, being careful to retain that fluffy texture.
  6. Whip the cream: Now, take that remaining cup of heavy cream and whip it until stiff peaks form. Fold this whipped cream into the chocolate mixture, blending everything together until you have a beautifully creamy mousse.
  7. Chill the mousse: Spoon the mixture into individual serving dishes and chill them in the refrigerator for at least 120 minutes.

Notes

For serving, top the mousse with a sprinkle of sea salt or whipped cream, and consider pairing it with fresh berries or extra caramel sauce.
