A healthier, homemade alternative to traditional Caesar dressing that combines Greek yogurt, garlic, and tangy ingredients for a rich flavor.

Ingredients

  • 1 cup plain Greek yogurt
  • 2 tablespoons mayonnaise
  • 1 tablespoon Dijon mustard
  • 2 tablespoons red wine vinegar
  • 2 teaspoons Worcestershire sauce
  • 1 clove garlic, minced
  • 1 teaspoon anchovy paste (or 2 anchovy fillets, minced)
  • 1/4 cup freshly grated Parmesan cheese
  • Salt and black pepper to taste
  • 12 tablespoons water (optional, for thinning)

Instructions

  1. Combine Greek yogurt and mayonnaise in a medium mixing bowl. Whisk until smooth.
  2. Add Dijon mustard, red wine vinegar, and Worcestershire sauce. Whisk to incorporate.
  3. Mix in minced garlic and anchovy paste (or fillets). Stir until combined.
  4. Incorporate freshly grated Parmesan cheese evenly into the dressing.
  5. Season with salt and black pepper to taste.
  6. Adjust consistency by adding water, one tablespoon at a time, if needed.
  7. Chill for at least 30 minutes in an airtight container to meld flavors.
  8. Serve over greens or as a dip for vegetables.

Notes

For a more intense flavor, let the dressing sit overnight in the fridge. Store leftovers in an airtight container for up to 5 days.
