A comforting Irish dish combining creamy mashed potatoes with tender sautéed cabbage.

Ingredients

  • 4 large potatoes, peeled and diced
  • 1/2 head cabbage, finely chopped
  • 1/2 cup milk
  • 4 tbsp butter
  • Salt and pepper to taste
  • 2 green onions, chopped (optional)

Instructions

  1. Boil the potatoes in salted water until tender, about 15-20 minutes.
  2. Sauté the cabbage in butter until soft and caramelized, about 5-7 minutes.
  3. Mash the drained potatoes with remaining butter and milk until creamy.
  4. Combine the sautéed cabbage and green onions with the mashed potatoes.
  5. Season with salt and pepper to taste.

Notes

Pairs well with roasted meats or as a side for hearty stews. Refrigerate leftovers for up to 3 days.
