  • 1/2 tsp dried thyme

Instructions

  1. Heat the oil in a pot over medium heat until shimmering.
  2. Add chopped onions and minced garlic to the pot, sautéing until soft and fragrant, about 3-4 minutes.
  3. Stir in the diced chicken and cook until browned on all sides, about 5-6 minutes.
  4. Pour in the chicken broth, bringing the mixture to a boil.
  5. Reduce the heat and stir in the fresh spinach, salt, pepper, and dried thyme.
  6. Let the soup simmer for about 10 minutes, allowing flavors to meld.
  7. Add the heavy cream and stir until combined, cooking for another 5 minutes.
  8. Ladle the warm soup into bowls and serve.
