A delightful mix of flavors and textures, this Creamy Asparagus Carbonara is a perfect balance between fresh and comforting, ready in just 25 minutes.

  • 8 oz spaghetti
  • 1 bunch asparagus, trimmed and cut into pieces
  • 4 slices turkey bacon, chopped
  • 2 large eggs
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1/4 tsp black pepper
  • 1 tbsp olive oil
  • 1/4 tsp salt

Instructions

  1. Cook the spaghetti according to package instructions, reserving 1/2 cup of pasta water before draining.
  2. Heat olive oil in a skillet over medium heat. Add chopped turkey bacon and cook until crispy. Remove from skillet and set aside on paper towel.
  3. Toss in the asparagus and minced garlic to the same skillet and sauté for about 3-4 minutes until tender and bright green. Remove from heat.
  4. Whisk together eggs, Parmesan cheese, salt, and black pepper until well combined.
  5. Return cooked spaghetti to the pot and slowly pour in the egg mixture, stirring quickly to avoid scrambling. The heat will create a creamy sauce.
  6. Fold in the sautéed asparagus and crispy turkey bacon. If too thick, add reserved pasta water to adjust consistency.
  7. Spoon into bowls and serve immediately, adding additional Parmesan cheese if desired.

Reserve pasta water for a creamy sauce. Adjust seasoning as needed while cooking. Consider swapping turkey bacon for pancetta or prosciutto for richer flavor.
