A nostalgic appetizer featuring mini sweet peppers stuffed with a creamy cheese mixture.

  • 12 mini sweet peppers
  • 4 oz cream cheese, softened
  • 1/4 cup shredded cheddar cheese
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • Salt and pepper to taste
  • Chopped chives, for garnish

Instructions

  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Cut the tops off each mini sweet pepper and carefully remove the seeds and membranes.
  3. In a mixing bowl, combine the softened cream cheese, shredded cheddar cheese, garlic powder, onion powder, salt, and pepper. Mix until all ingredients are well combined and creamy.
  4. Using a spoon or piping bag, generously stuff each mini pepper with the cream cheese mixture.
  5. Place the stuffed mini peppers on your prepared baking sheet, ensuring they’re spaced out evenly.
  6. Bake in the preheated oven for 15-20 minutes, or until the peppers are tender and the cheese is melted and slightly golden.
  7. Remove the peppers from the oven and let them cool slightly. Sprinkle with chopped chives for a burst of color.
  8. Serve the cream cheese stuffed mini peppers warm and enjoy!
