A comforting and hearty chicken stew perfect for chilly nights, made easily in a slow cooker with fresh vegetables and aromatic herbs.

  • 1.5 lbs of chicken thighs or breasts, cut into pieces
  • 4 cups of chicken broth
  • 3 large carrots, sliced
  • 2 medium potatoes, diced
  • 1 onion, chopped
  • 2 celery stalks, chopped
  • 3 cloves of garlic, minced
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • Salt and pepper to taste
  • 2 cups of frozen peas
  • 2 tbsp olive oil

Instructions

  1. Prepare your fresh ingredients by combining the chicken pieces, carrots, potatoes, onion, celery, and garlic in a large slow cooker.
  2. Pour in the chicken broth and add the thyme, rosemary, salt, and pepper.
  3. Stir to combine all the ingredients, ensuring everything is well mixed.
  4. Cover and cook on low for 6-8 hours or high for 3-4 hours until the chicken is tender and cooked through.
  5. Add the frozen peas about 30 minutes before serving.
  6. Taste and adjust seasoning if needed, then serve warm.

Notes

Leftovers can be stored in an airtight container for up to 4 days or frozen for up to 3 months. Thaw overnight before reheating.
