  • 4 large eggs
  • 1 teaspoon baking powder
  • ¼ teaspoon salt

Instructions

  1. Begin by gathering all your ingredients. Measure out 1 cup of full-fat cottage cheese, separate the egg yolks from the whites, and get your baking powder and salt ready.
  2. In a large mixing bowl, use an electric mixer to beat the egg whites until they form soft peaks, about 3-5 minutes.
  3. In another bowl, combine the egg yolks, cottage cheese, baking powder, and salt. Whisk these together until well mixed.
  4. Gently fold the egg whites into the cottage cheese mixture using a spatula.
  5. Preheat your oven to 300°F (150°C) and line a baking sheet with parchment paper. Spoon the mixture onto the paper, creating small rounds.
  6. Bake for 30-35 minutes until golden brown on top.
  7. Remove from the oven and allow to cool slightly on the tray before transferring to a wire rack.
