A cozy, soul-warming bean soup filled with delicious flavors and memories.

Ingredients

  • 2 cups dried beans (your choice)
  • 1 onion, diced
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 3 garlic cloves, minced
  • 6 cups vegetable broth
  • 1 bay leaf
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp olive oil

Instructions

  1. Rinse and soak the beans in a large bowl of water overnight.
  2. Heat the olive oil in a large pot over medium heat.
  3. Add the diced onion, chopped carrots, chopped celery, and minced garlic to the pot and sauté for about 5 minutes.
  4. Drain the soaked beans and add them to the pot.
  5. Pour in the vegetable broth and add the bay leaf.
  6. Bring the mixture to a gentle boil.
  7. Reduce the heat, cover, and let it simmer for 1 hour.
  8. Season with salt and pepper to taste.
  9. Serve with love, removing the bay leaf before serving.

Notes

For a creamier texture, blend a portion of the soup or use an immersion blender. Store leftovers in the refrigerator for up to 5 days or freeze for up to 3 months.
