Deliciously fluffy cinnamon muffins that evoke the warmth of home.

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 cup milk
  • 1/3 cup vegetable oil
  • 1 large egg
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C) and prepare the muffin tin with paper liners.
  2. Combine the flour, sugar, baking powder, salt, and ground cinnamon in a large bowl.
  3. Whisk the milk, vegetable oil, egg, and vanilla extract together in another bowl.
  4. Mix the wet ingredients into the dry ingredients until just combined.
  5. Fill each muffin cup about two-thirds full.
  6. Bake for 18-20 minutes until a toothpick comes out clean.
  7. Allow to cool slightly before transferring to a wire rack and serving warm.

Notes

Don’t overmix the batter for fluffy muffins. Store leftovers in an airtight container for up to 3 days.
