Delightful cupcakes that combine rich chocolate, coffee, and a luscious mascarpone frosting, reminiscent of classic tiramisu.

Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup cocoa powder
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup unsalted butter, softened
  • 1 cup sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup milk
  • 1 cup strong brewed coffee, cooled
  • 1 cup mascarpone cheese
  • 1 cup heavy cream
  • 2 tbsp powdered sugar
  • Cocoa powder for dusting

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. Sift together the flour, cocoa powder, baking powder, and salt in a bowl.
  3. Cream the softened butter and sugar until light and fluffy.
  4. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  5. Alternate adding the flour mixture and milk to the butter mixture, starting and ending with the flour.
  6. Fill each cupcake liner about two-thirds full with the batter.
  7. Bake for 18-20 minutes or until a toothpick inserted in the center comes out clean.
  8. Make the frosting by whipping together the mascarpone cheese, heavy cream, and powdered sugar until soft peaks form.
  9. Dip each cupcake briefly in the cooled coffee.
  10. Frost each cupcake generously with the mascarpone mixture, and dust with cocoa powder before serving.

Notes

Store in an airtight container in the fridge for up to 3 days. Allow to come to room temperature before serving.
