Deliciously fluffy brioches filled with rich vanilla custard and chocolate chips, perfect for breakfast or dessert.

  • 2 1/4 cups all-purpose flour
  • 2 tbsp sugar
  • 1/2 tsp salt
  • 2 1/4 tsp instant yeast (1 packet)
  • 2 large eggs
  • 1/2 cup warm milk
  • 1/2 tsp vanilla extract
  • 1/2 cup unsalted butter, softened (cut into small cubes)
  • 2 cups milk
  • 4 large egg yolks
  • 1/3 cup sugar
  • 1/4 cup cornstarch
  • 1 tbsp butter
  • 1 tsp vanilla extract or 1/2 tsp vanilla bean paste
  • 1/2 cup mini chocolate chips
  • 1 egg, beaten (for egg wash)
  • Optional: powdered sugar for dusting

Instructions

  1. Prepare the Brioche Dough: In a bowl, combine flour, sugar, salt, and yeast. In a separate bowl, whisk together eggs, warm milk, and vanilla extract. Gradually add the wet ingredients to the dry ingredients and mix until combined. Knead in the softened butter until the dough is smooth. Allow the dough to rise for about 1 hour or until doubled in size.
  2. Whisk Together the Custard: Meanwhile, make the vanilla custard by whisking together egg yolks, sugar, and cornstarch in a saucepan. Gradually add milk and cook over medium heat, stirring constantly until thickened. Remove from heat, stir in butter and vanilla, then let cool.
  3. Preheat the Oven: Preheat your oven to 375°F (190°C). Roll out the risen dough and cut into squares.
  4. Assemble the Brioches: Place a dollop of custard and some chocolate chips on each square, then fold and shape into brioches.
  5. Brush and Rise Again: Place brioches on a baking sheet, brush with beaten egg, and let them rise for another 30 minutes.
  6. Bake to Perfection: Bake for 20-25 minutes until golden brown. Dust with powdered sugar if desired before serving.

Notes

Knead the dough thoroughly for a light, fluffy texture. Use a thermometer to ensure warm milk is 110°F to 115°F. The custard should coat the back of a spoon when ready.
