1 cup unsalted butter
2 cups granulated sugar
4 large eggs
1 teaspoon vanilla extract
1 cup all-purpose flour
1/2 cup unsweetened cocoa powder
1/2 teaspoon salt
1 cup cherry preserves
8 oz cream cheese, softened
1/3 cup powdered sugar
1 large egg
1 teaspoon vanilla extract
1 cup fresh or frozen cherries, pitted (optional)
Instructions
Preheat the oven to 350°F (175°C) and grease a 9×13 inch baking pan.
Melt the butter in a saucepan over low heat. Remove from heat and stir in the granulated sugar.
Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
Combine the flour, cocoa powder, and salt in another bowl. Gradually add the dry mixture to the wet mixture, stirring until combined.
Pour half of the brownie batter into the prepared pan and spread evenly.
In a medium bowl, beat the cream cheese, powdered sugar, egg, and vanilla extract until smooth. Stir in the cherry preserves and fresh or frozen cherries if using.
Spread the cream cheese mixture over the brownie batter.
Drop spoonfuls of the remaining brownie batter on top of the cheesecake layer and use a knife to swirl it together.
Bake for 30-35 minutes, or until a toothpick comes out mostly clean.
Allow to cool before cutting into squares and serving.
Notes
Serve with vanilla ice cream or whipped cream for an indulgent treat. Store in an airtight container for up to three days.
