A delightful combination of crispy chicken thighs marinated in chipotle honey glaze, served with creamy smoked gouda mashed potatoes.

Ingredients

  • 4 chicken thighs
  • 2 tablespoons chipotle in adobo sauce
  • 2 tablespoons honey
  • Salt and pepper to taste
  • 2 cups potatoes, peeled and cubed
  • 1/2 cup smoked gouda cheese, shredded
  • 1/2 cup milk
  • 2 tablespoons butter

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Mix together the chipotle in adobo sauce, honey, salt, and pepper for the marinade.
  3. Coat the chicken thighs in the marinade and place them in a baking dish.
  4. Bake the chicken thighs for 25-30 minutes until thoroughly cooked.
  5. Bring a pot of salted water to a boil and add the cubed potatoes. Cook until tender, about 15-20 minutes.
  6. Drain the potatoes and mash them with smoked gouda, milk, and butter until creamy.
  7. Serve the chipotle honey chicken thighs alongside the gouda mashed potatoes.

Notes

For a spicier kick, you can add some of the chipotle sauce to the mashed potatoes. Store leftovers in an airtight container for up to 3 days.
