A cozy chickpea soup filled with warming spices and hearty textures, perfect for a chilly evening.

Ingredients

  • 2 cups of cooked chickpeas
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 4 cups of vegetable broth
  • 1 can of diced tomatoes
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh parsley for garnish

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the chopped onion and garlic, and sauté until the onion is translucent.
  3. Stir in the ground cumin and paprika, cooking for another minute until fragrant.
  4. Combine the cooked chickpeas and diced tomatoes, allowing the flavors to blend.
  5. Pour in the vegetable broth and bring to a boil.
  6. Reduce the heat and let it simmer for about 20 minutes.
  7. Season with salt and pepper to taste and serve hot, garnished with fresh parsley.

Notes

For extra flavor, add a bay leaf while simmering. Blend half for a creamier texture if desired.
