A warm and comforting bowl of homemade chicken tortilla soup with vibrant flavors.

Ingredients

  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups chicken broth
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 2 cups cooked chicken, shredded
  • 1 cup corn (fresh, frozen, or canned)
  • Salt and pepper to taste
  • Tortilla strips
  • Avocado, diced
  • Chopped cilantro
  • Lime wedges

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the diced onion and minced garlic, cooking until softened, about 3-4 minutes.
  3. Stir in the diced bell pepper, cooking until it softens.
  4. Add the can of diced tomatoes, chicken broth, ground cumin, and chili powder. Bring to a gentle boil.
  5. Reduce the heat and let the soup simmer for about 10 minutes.
  6. Stir in the shredded chicken and corn. Simmer for an additional 5 minutes.
  7. Season with salt and pepper to taste.
  8. Serve hot, topped with tortilla strips, diced avocado, cilantro, and lime.
