  • 1 pound Chicken Breast (Cut into cubes)
  • 2 cups Rice (Brown rice preferred)
  • 1 cup Greek Yogurt (Sour cream can be used as an alternative)
  • 2 tablespoons Lime Juice (Can substitute with lemon juice)
  • 1 tablespoon Sriracha (Adjust based on spice preference)
  • 1 teaspoon Paprika (Smoked paprika for a smokier flavor)
  • 1 teaspoon Garlic Powder (Fresh minced garlic for more flavor)
  • 1 teaspoon Salt (Adjust to taste)
  • 1 teaspoon Pepper (Adjust to taste)
  • 1 teaspoon Cumin
  • 1 bunch Fresh Herbs (Cilantro or Parsley) (Omit if cilantro is not preferred)
  • 2 tablespoons Olive Oil (Use extra virgin for better flavor)

Instructions

  1. Prepare the Rice: Start by cooking the brown rice according to the package instructions.
  2. Cube Your Chicken: While the rice is cooking, take your chicken breast and cut it into bite-sized cubes.
  3. Season the Chicken: In a mixing bowl, combine the chicken cubes with paprika, garlic powder, cumin, salt, and pepper.
  4. Sauté the Chicken: Heat olive oil in a large skillet over medium-high heat, add the seasoned chicken cubes, and cook until golden brown.
  5. Roast the Sweet Potatoes: Toss cubed sweet potatoes with olive oil, salt, and pepper, and roast them in the oven at 425°F (220°C) for about 20 minutes.
  6. Prepare the Green Veggies: Sauté or steam your choice of green vegetables until just tender.
  7. Mix the Sauce: In a small bowl, mix together the Greek yogurt, lime juice, and Sriracha.
  8. Assemble the Bowls: Start with a scoop of brown rice, layer with roasted sweet potatoes, sautéed chicken, and greens.
  9. Drizzle and Garnish: Top your bowls with the creamy yogurt sauce and sprinkle with fresh herbs.

Notes

For a vegetarian option, substitute chicken with chickpeas or tofu. You can also use butternut squash or regular potatoes instead of sweet potatoes.
