  • 1/4 cup olive oil
  • 1/4 cup lime juice
  • 2 tsp chili powder

  • 1 tsp dried oregano

  • 2 cups cooked rice
  • 1 tbsp butter or olive oil (for rice)
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 red onion, sliced
  • 1 can black beans, drained and rinsed
  • 1 cup corn
  • Avocado, for topping
  • Cilantro, for garnish
  • Sour cream or Greek yogurt, for topping
  • Salsa or pico de gallo, for topping
  • Shredded cheese, for topping
  • Lime wedges, for serving
  • Pickled or fresh jalapeños, for topping

Instructions

  1. Prepare the marinade by combining olive oil, lime juice, chili powder, cumin, smoked paprika, sweet paprika, garlic powder, onion powder, dried oregano, salt, black pepper, and cayenne in a medium bowl.
  2. Marinate the chicken in the mixture for at least 20–30 minutes in the refrigerator.
  3. Cook the rice by rinsing it until the water runs clear, then boiling in chicken broth or water with butter and salt; cover and simmer for 15–18 minutes.
  4. Cook the fajita vegetables in olive oil over medium-high heat until tender-crisp and slightly charred.
  5. Cook the marinated chicken in the same skillet until no longer pink and lightly charred.
  6. Warm the black beans and corn in separate pans until heated through.
  7. Prepare toppings like sliced avocado, cilantro, sour cream, salsa, cheese, and lime wedges.
  8. Assemble the bowls with rice, chicken, vegetables, beans, corn, and toppings.
  9. Serve immediately, encouraging everyone to squeeze lime over their bowls.
