A comforting Chicken Burrito Casserole combining seasoned chicken, beans, and iconic burrito flavors, topped with melty cheese for the perfect family meal.

Ingredients

  • 2 cups cooked, shredded chicken
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 cup salsa
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 2 cups cooked rice
  • 2 cups shredded cheese (cheddar or Mexican blend)
  • Salt and pepper to taste
  • Tortilla chips (optional, for topping)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine the shredded chicken, black beans, corn, salsa, chili powder, cumin, cooked rice, and half of the cheese in a large mixing bowl. Season with salt and pepper.
  3. Spread the mixture evenly into a greased 9×13-inch baking dish.
  4. Add the remaining cheese on top. Optionally, crush tortilla chips over the top for added crunch.
  5. Bake for 25–30 minutes, until the cheese is melted and bubbly.
  6. Cool for a few minutes before serving.

Notes

For added flavor, marinate your shredded chicken in lime juice and spices beforehand. This dish can be made vegetarian by omitting chicken and adding more beans or vegetables.
