Cheesy Shrimp Alfredo Roll-Ups

Comforting and creamy roll-ups filled with juicy shrimp and ricotta, all covered in Alfredo sauce.

Ingredients

  • 8 large flour tortillas
  • 2 cups cooked shrimp, peeled and deveined
  • 1 cup Alfredo sauce (store-bought or homemade)
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 cup frozen spinach, thawed and drained
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Sauté the minced garlic in olive oil over medium heat for about 1 minute.
  3. Cook the shrimp in the skillet for 2-3 minutes until heated through.
  4. Combine the shrimp mixture with ricotta, half the mozzarella, Parmesan, spinach, and Italian seasoning in a large bowl.
  5. Lay a tortilla flat and spread a spoonful of the shrimp mixture in the center.
  6. Roll the tortilla tightly from the bottom upwards.
  7. Pour Alfredo sauce into the bottom of a baking dish and arrange the rolled tortillas seam-side down.
  8. Cover the tortillas with remaining Alfredo sauce.
  9. Sprinkle remaining mozzarella cheese on top.
  10. Bake covered with foil for 20 minutes, then remove foil and bake for an additional 10-15 minutes.
  11. Garnish with fresh parsley before serving.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. They can also be frozen before baking.
