Delicious quesadillas filled with shredded chicken, melty cheese, and a spicy jalapeño cream sauce, all drizzled with hot honey for a sweet and spicy kick.

  • 2 cups cooked chicken, shredded
  • 1 cup shredded cheese (cheddar or Monterey Jack)
  • 4 large tortillas
  • 1/4 cup hot honey
  • 1/4 cup cream cheese, softened
  • 1/2 cup sour cream
  • 12 jalapeños, chopped
  • 1 tablespoon lime juice
  • Salt and pepper to taste
  • Oil for frying

Instructions

  1. Mix the chicken and hot honey in a bowl until well coated.
  2. Prepare the jalapeño cream sauce by combining cream cheese, sour cream, jalapeños, lime juice, and salt and pepper, then whisk until smooth.
  3. Heat a skillet over medium heat and add enough oil to coat the bottom.
  4. Assemble the quesadilla by laying one tortilla in the skillet, adding the chicken mixture and cheese, then topping with another tortilla.
  5. Cook each quesadilla for about 3-4 minutes on each side until golden brown and melty.
  6. Serve the quesadillas warm with the spicy jalapeño cream sauce on the side.

Notes

Customize your heat level by adjusting the number of jalapeños. Can be made vegetarian by substituting chicken with black beans or sautéed vegetables.
