Delicious and nutritious egg bites packed with cottage cheese and your favorite vegetables, perfect for breakfast or snacks.

  • 6 large eggs
  • 1 cup cottage cheese
  • 1 cup shredded cheese (cheddar or your choice)
  • 1 cup chopped vegetables (spinach, bell peppers, onions, etc.)
  • Salt and pepper to taste
  • Cooking spray or oil for greasing

Instructions

  1. Preheat the oven to 375°F (190°C) and grease a muffin tin with cooking spray or oil.
  2. Whisk together the eggs in a large bowl until well blended. Add salt and pepper to taste.
  3. Incorporate the cottage cheese into the eggs, mixing well.
  4. Mix in the shredded cheese and chopped vegetables.
  5. Fill the muffin cups about 3/4 full with the egg mixture.
  6. Bake for 20-25 minutes, or until set and lightly golden.
  7. Cool for a few minutes before removing from the tin and serve warm.

Notes

Store leftovers in an airtight container for up to five days; reheat in the microwave or freeze for longer storage.
