  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil
  • 2 eggs
  • 1 tsp vanilla extract

  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 8 oz cream cheese, softened
  • 1/4 cup powdered sugar
  • 1 tsp lemon juice

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×9-inch baking pan to ensure those delightful bars come out effortlessly.
  2. In a large bowl, mix together the flour, cinnamon, baking powder, baking soda, and salt.
  3. Whisk the vegetable oil, granulated sugar, brown sugar, eggs, and vanilla extract until smooth.
  4. Add the dry ingredients to the wet mixture and stir until just combined.
  5. Fold in the grated carrots.
  6. Pour the carrot-filled batter into your prepared pan, spreading it evenly.
  7. Beat together the softened cream cheese, powdered sugar, and lemon juice until smooth.
