Delightful caramel apple cheesecake bars that combine creamy cheesecake with crunchy apples and a graham cracker crust, perfect for fall.

Ingredients

  • 1 cup graham cracker crumbs
  • 1/4 cup sugar
  • 1/2 cup unsalted butter, melted
  • 2 (8 oz) packages cream cheese, softened
  • 1 cup sugar
  • 1 tsp vanilla extract
  • 2 large eggs
  • 2 cups peeled and diced apples
  • 1 cup caramel sauce
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×9 inch baking pan.
  2. Mix graham cracker crumbs, 1/4 cup sugar, and melted butter until well combined. Press into the bottom of the prepared pan.
  3. Beat together the softened cream cheese, 1 cup sugar, and vanilla until smooth. Add the eggs one at a time, mixing after each addition.
  4. Fold in the diced apples, caramel sauce, cinnamon, and nutmeg until combined.
  5. Pour the cheesecake mixture over the crust and spread evenly.
  6. Bake for 30-35 minutes until set and slightly golden.
  7. Cool at room temperature, then refrigerate for at least 2 hours.
  8. Cut into squares and drizzle with additional caramel, if desired.

Notes

Pair with vanilla ice cream or whipped cream. Store leftovers in an airtight container for up to 4 days.
