A delightful dessert that combines traditional Italian cannoli flavors with a moist cake, layered with ricotta and chocolate chips.

  • 1 1/2 cups sugar
  • 1/2 cup unsalted butter, softened
  • 3 large eggs
  • 1 cup ricotta cheese
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup mini chocolate chips
  • Zest of 1 orange
  • Powdered sugar for dusting

Instructions

  1. Preheat your oven to 350°F (175°C) and grease and flour two 9-inch round cake pans.
  2. Cream together the softened butter and sugar until light and fluffy.
  3. Add the eggs, one at a time, mixing well after each addition.
  4. Whisk together the flour, baking powder, baking soda, and salt in a separate bowl.
  5. Add the dry ingredients to the wet mixture, alternating with the ricotta and vanilla extract.
  6. Fold in the mini chocolate chips and orange zest gently.
  7. Divide the batter evenly between the prepared pans, smoothing the tops.
  8. Bake for 25-30 minutes, or until a toothpick inserted comes out clean.
  9. Cool the cakes in the pans for about 10 minutes, then transfer to a wire rack to cool completely.
  10. Layer the cakes and dust with powdered sugar before serving.

Notes

Serve with espresso or sweet dessert wine. Pairs well with fresh fruits or vanilla ice cream.
