  • 1 lb shrimp, peeled and deveined
  • 2 tablespoons Cajun seasoning
  • 2 tablespoons olive oil
  • 1 bell pepper, diced
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup chicken broth
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Cook the penne pasta according to package instructions, then drain and set aside.
  2. Heat the olive oil in a large skillet over medium heat.
  3. Sauté the diced bell pepper and onion until soft and fragrant, about 3-5 minutes.
  4. Add the minced garlic and shrimp, cooking until the shrimp turn pink and opaque.
  5. Sprinkle Cajun seasoning over the shrimp and veggies, mixing well.
  6. Pour in the chicken broth and heavy cream, stirring until combined.
  7. Add the cooked penne pasta, mixing until heated through and coated in the sauce.
  8. Season with salt and pepper to taste.
  9. Serve hot, garnished with fresh parsley.
