A hearty one-pan dish combining rich, spicy Cajun sausage with rice, perfect for busy weeknights and cozy gatherings.

Ingredients

  • 1 lb Cajun sausage, sliced
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • 1 bell pepper, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can diced tomatoes (14.5 oz)
  • 1 tsp Cajun seasoning
  • Salt and pepper to taste
  • 1 tbsp olive oil
  • Green onions for garnish

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the sliced Cajun sausage and cook until browned.
  3. Toss in the diced bell pepper, chopped onion, and minced garlic; sauté until soft.
  4. Stir in the long-grain rice for 1-2 minutes.
  5. Pour in the chicken broth and diced tomatoes, along with Cajun seasoning, salt, and pepper; stir thoroughly.
  6. Bring to a boil, then reduce heat to low and cover; simmer for 20 minutes.
  7. Remove from heat and let it sit covered for 5 minutes.
  8. Fluff the rice with a fork and serve garnished with chopped green onions.

Notes

For extra heat, add cayenne pepper or diced jalapeños. Can be made vegetarian with plant-based sausage.
